Seitan Steaks https://www.veganit.org/recipe/steaks-with-mushrooms/ https://www.veganit.org/recipe/steaks-with-mushrooms/#respond Sat, 03 Oct 2020 15:11:06 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1698 Read More]]> My dear grandmother, who took care of me and my brother when we were little, often used to cook steak with mushrooms. We loved it and always asked for a second plate.

This is my vegan version of my grandmother’s recipe.

Note: Of course, it will never be as good as grandma’s (grandma’s recipes are and will be always superior).

Note: As you can see, I still don’t master the art of rolling crepes. But, who cares? It was delicious after all. They disappeared in 5 min. This was my first attempt using the dough recipe from a youtube channel called “Receitas do Kazu”. Watch his video if you are having trouble rolling the crepes: https://www.youtube.com/watch?v=p5sb-wv7Pvc&t=170s%20if%20you%20are%20g%C2%

What I like the most about this recipe is that it can be made ahead of time, as the flavors will only get better as the soup chills in the fridge. This recipe was inspired by “Vichyssoise de alho francês com avelãs torradas, cebolinho e ovas de truta” by José Avilez – an AMAZING Portuguese cooker. Butternut Squash Stuffed with Tofu https://www.veganit.org/recipe/butternut-squash-stuffed-with-tofu/ https://www.veganit.org/recipe/butternut-squash-stuffed-with-tofu/#respond Sun, 13 Sep 2020 18:17:33 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1445 Read More]]> This simple Stuffed Butternut Squash with Tofu is healthy comfort food at its best! Flavorful, satisfying, and full of potassium, vitamin C, and vitamin A! You can serve this dish with creamy spinach “ricotta” and some roasted pecans.

❓ How to Pick the Best Butternut Squash?

 1. Look for butternut squash that is heavy for its size. It doesn’t need to be the biggest one, but one that is solid and heavy is a must.
 2. Look for squash with a nice beige-ish color. Surface scratches and imperfections are normal, but deep scratching, cuts, or soft spots are not.

Keep your butternut squash in a cool, dry place for up to two weeks until ready to cook.
