 A refreshing change from the usual fried variety, and have become a family favorite. They are great as a cool summertime meal, and are delicious dipped in a peanut sauce.

MAKE IT GLUTEN FREE: Be sure to use certified gluten-free noodles and tamari (not soy sauce, which typically contains gluten).

MAKE IT PEANUT FREE: Substitute almond butter (if not avoiding nuts altogether) or sunflower seed butter for the peanut butter.

PREPARE IN ADVANCE: You can definitely mix together the peanut sauce in advance. You can also prepare the veggies several hours or up to 1 day in advance, and store them in an air-tight container (they will lose freshness with time). The spring roll wrappers tend to dry out with time or once chilled, so spring rolls are best assembled shortly before serving. If you’d like to keep them fresh for an hour or two, store them under a lightly damp, lint-free tea towel at room temperature (the skin tends to harden in the refrigerator).

Tip: to bulk up the protein, and to make this a complete meal you can totally add tofu strips 🙂

What´s Chocolate Salame? Chocolate Salame is a Portuguese dessert made from cocoa, biscuits, and a bit of port wine or rum. Some varieties also contain chopped nuts, such as almonds, or hazelnuts and may be shaped like truffles. In Portugal, they are typically made using  Marie Cookies. But, since Marie Cookies are not vegan, I used Tostadas Cookies. If you are having trouble finding vegan substitutes for Marie Cookies, you can use digestive cookies.

Paella means “frying pan” in ´Valencian, Valencia’s regional language.

❓ What´s the best rice to use?

The best rice to use is Bomba rice because it has the ability to absorb twice the amount of liquid than regular rice without getting mushy. However, if you can’t find them, the next best replacement is Arborio rice which is commonly used for Risotto. It gets super creamy when liquid is stirred in slowly. Paella is not meant to be creamy, so you definitely don’t want to stir the arborio or you’ll end up with risotto. In fact, you shouldn’t stir paella at all once the broth has entered the pan (like I did).
