What a pleasure, to start your day with a tummy-filling bowl of delicious whole-grain granola! This granola makes a wonderful snack or breakfast (add your milk of choice and maybe some fresh fruit). It also stores beautifully, so it makes a great homemade gift.

In a food processor, add the hazelnuts, almonds, and pumpkin seeds. Process it for 5 seconds on medium speed. Transfer it to a large bowl;
Note: Be careful not to process it too much! Otherwise, it will be turned into flour.

To the large bowl add the rest of the ingredients and mix it until everything is well combined;

Preheat your oven to 150ºC and line a large baking sheet with parchment paper;

Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer;

Bake until lightly golden, about 25-30 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer);

Note: It might not seem like it’s done yet, but it will continue to crisp up as it cools.

Let the granola cool completely before storing it in an airtight container at room temperature. Enjoy your breakfast!
