A refreshing change from the usual fried variety, and have become a family favorite. They are great as a cool summertime meal, and are delicious dipped in a peanut sauce.

MAKE IT GLUTEN FREE: Be sure to use certified gluten-free noodles and tamari (not soy sauce, which typically contains gluten).

MAKE IT PEANUT FREE: Substitute almond butter (if not avoiding nuts altogether) or sunflower seed butter for the peanut butter.

PREPARE IN ADVANCE: You can definitely mix together the peanut sauce in advance. You can also prepare the veggies several hours or up to 1 day in advance, and store them in an air-tight container (they will lose freshness with time). The spring roll wrappers tend to dry out with time or once chilled, so spring rolls are best assembled shortly before serving. If you’d like to keep them fresh for an hour or two, store them under a lightly damp, lint-free tea towel at room temperature (the skin tends to harden in the refrigerator).

Tip: to bulk up the protein, and to make this a complete meal you can totally add tofu strips 🙂

Note: The nutritional information is per serving (the peanut sauce is not included)

Gaspacho https://www.veganit.org/recipe/gaspacho/ https://www.veganit.org/recipe/gaspacho/#respond Tue, 30 Mar 2021 12:26:41 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1950 Read More]]> Gazpacho, also called Andalusian gazpacho, is a cold soup made of raw, blended vegetables. Gazpacho is widely eaten in Spain and Portugal, particularly during Summer, as is it super refreshing and cool.

This is an Andalusian version of Gazpacho. It´s fresh, cold, easy to make, and is an ideal way to taste the peak of summer with all the intense flavors, aromas, and colors of the season.

Green Smoothie https://www.veganit.org/recipe/green-smoothie/ https://www.veganit.org/recipe/green-smoothie/#respond Fri, 22 Jan 2021 11:20:12 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1934 Read More]]> This is my go-to green smoothie recipe that I make when I feel like my body needs a little detoxing!

Tips:

-> I think that green smoothies are the best when they’re served fresh, straight from the blender. So, I try to meal prep smoothies by having all the ingredients on hand and ready to go. This means I always have my freezer stocked with frozen fruit and greens!

-> For extra protein and healthy fats, you can also add to your smoothie 1tbsp of your favorite nut butter

-> You can blend your green smoothie the night before and store it in your fridge (up to 2 days). Use an airtight lid to limit oxidation and keep it as fresh as possible. When ready to drink, give it a good shake before you open.

Chocolate Salame https://www.veganit.org/recipe/chocolate-salame/ https://www.veganit.org/recipe/chocolate-salame/#respond Sat, 03 Oct 2020 14:55:42 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1876 Read More]]> The perfect crunchy treat to snack on. A festive and simple dessert to serve or bring to your next holiday party–or to give as gifts this year.

What´s Chocolate Salame? Chocolate Salame is a Portuguese dessert made from cocoa, biscuits, and a bit of port wine or rum. Some varieties also contain chopped nuts, such as almonds, or hazelnuts and may be shaped like truffles. In Portugal, they are typically made using Marie Cookies. But, since Marie Cookies are not vegan, I used Tostadas Cookies. If you are having trouble finding vegan substitutes for Marie Cookies, you can use digestive cookies.

Vegan Ceviche https://www.veganit.org/recipe/vegan-ceviche/ https://www.veganit.org/recipe/vegan-ceviche/#respond Wed, 23 Sep 2020 14:48:04 +0000 https://www.veganit.org/?post_type=osetin_recipe&p=1707 Read More]]> Ceviche is a style of cuisine that comes from coastal areas of Latin America. It combines traditional foods eaten by natives of the region and foods brought by Spanish colonizers in the 1600s. Ceviche is a seafood dish where diced cubes of raw fish are marinated in a lemon or lime juice mixture. However, in my vegan version, the traditional raw fish is replaced with tofu. This vegan ceviche is delicious, colorful, and super healthy!
