Ceviche is a style of cuisine that comes from coastal areas of Latin America. It combines traditional foods eaten by natives of the region and foods brought by Spanish colonizers in the 1600s. Ceviche is a seafood dish where diced cubes of raw fish are marinated in a lemon or lime juice mixture. However, in my vegan version, the traditional raw fish is replaced with tofu. This vegan ceviche is delicious, colorful, and super healthy!

Cut the smoked tofu, tomato, mango, and avocado into small cubes. Chop the red onion;

In a large bowl, add the tofu, red onion, tomato, olive oil and, lime juice. Carefully, mix it well and set it aside for 5 to 10 minutes;

Add the avocado and mango, season with a little salt, and mix well. Finish off some chopped coriander and serve with fruit chips.
