Ingredients

Adjust Servings:
3 medium grated carrots
300gr of cake flour
200gr of sugar the amount of sugar that you add varies depending if the vegetable drink and sherred coconut are sweetened
1-2 tsp of baking soda
1 pinch of salt
cinnamon to taste
ginger to taste
nutmeg to taste
120mL of neutral oil
1 tsp of vanilla extract
360mL of your favorite vegetable drink
50gr of shredded coconut + a little extra for topping
1 tsp of apple cider vinegar

Looking for a treat for Halloween? Try this super moist and tender carrot coconut cake!

Note: I found a similar recipe by Fábio Gomes in his book “Vegan é fácil” and added a little twist 😉

In a bowl, mix the flour, baking soda, sugar, spices, salt, and grated coconut;

In another bowl, add the oil, vanilla extract, vegetable drink, and apple cider vinegar;

Heat the oven to 180ºC;

Mix the liquids well with an electric mixer and slowly add the dry ingredients;

Add the grated carrot and fold gently;

Put the batter in a circular cake pan (approximately 20 cm in diameter) and bake it in the oven for 40min.

Note: The baking time may vary depending on the type of oven

Check with a toothpick that the cake is ready. Remove the cake from the oven and let it cool completely before removing it from the pan.

Sprinkle with grated coconut before serving. Enjoy!
