What is Leite de Creme?
“Leite Creme” is a Portuguese traditional desert similar to French Cream Brûlée but cooked on the stove top instead of baked.
It’s rich, creamy texture is perfect as a light and low fat dessert.

Combine the corn starch and sugar in a bowl and stir well. Add in 200mL of the soy drink and stir it with a whisk; |

Bring to a boil the rest of the soy drink, cinnamon and lemon peel. When it starts boiling, add the corn-starch mixture, turn down the heat and stir it well for 3-5min; Note: You’ll know it’s ready when it’s thickened significantly and is a smooth, creamy texture, similar to pudding. |

Pour the mixture into four 180ml (3/4 cup) crème brûlée dishes or ramekins. Let cool and refrigerate to chill completely; |

Before serving, sprinkle with additional sugar and caramelize quickly with a crème brûlée iron or a torch. You could also caramelise the crème brûlée under the broiler of an oven. Note: You can also keep it simple and sprinkle with additional sugar and ground cinnamon on top. |
