250gr of type 55 flour

250ml of water

200gr of maple syrup

100-200gr of sugarto taste

200gr of olive oil

70gr of blanched almonds+ a little more to decorate

250gr of corn flour

Directions
“Broas de mel” – a typical Portuguese cookie, commonly eaten around holidays like Christmas or Easter. This is my vegan version of “broas de mel”. They’re dense, sweet, satisfying, and perfect to have on yout dinner table.

In a high speed processor, grate the almonds and set aside. |

Mix water, sugar, olive oil, maple syrup in a pan. Leave on low heat for 5 minutes, stirring occasionally. |

Turn up the heat, add flour, spices and the reserved almond and mix. When it boils, turn off the heat and let it cool. |

Preheat the oven to 180C. |

Shape the "broas", place an almond on top of each "broa", place on a tray lined with parchment paper and bake in the oven for 20min. |
