Ingredients

2 plump tomatoes

200gr of frozen edamame

1 red bell pepper

110gr of medium-grind bulgur

1/2 red onion

Dressing:

2 tsp of lime juice

1tsp of red wine vinegar

1 hand of parsleyplus extra for topping

1 tsp of maple syrup

1 tbsp of olive oil
-
1 dash of black pepper
-
1 dash of salt
Directions
This healthy Edamame Salad is tossed with a homemade Cilantro Lime Dressing for a colorful main (or side) dish that’s quick, easy, and crazy delicious!
Variations: you can add avocado, sweet corn, beans, or carrots 🙂

Cook the edamame and bulgur according to package instructions |

Meanwhile, chop your bell pepper, red onion, and parsley. |

Once the edamame and bulgur are cooked, add them to a large bowl and mix in the onion, tomatoes, and bell pepper. |

For the dressing:Add the rest of the ingredients to a blender and blend until smooth, drizzle on top of the salad, top it with extra parsley and serve fresh. Note: If the mixture appears too thick, blend in a few tbsps of cold water. |
