1200gr of sweet potato
200mL of coconut drink
140gr of your favorite syrup I normaly use maple syrup or brown rice syrup
110gr of coconut flour
1 tbsp of ágar-ágar
1 tsp of vanilla extract
For Decorating:
1 tbsp of coconut flakes

This is one of my favorites desserts of all time. It´s simply delicious, it´s healthy, it´s full of nutrients and it´s so easy to make! This recipe is not mine. It´s from a book called “O livro de cozinha da Marta – Uma forma de amar” by Marta Horta Varatojo. But, since is so good, I decided to share it with you, guys.

Steps

Peel the sweet potato and chop it into small chunks;

In a large pan, add water and salt. Cook the sweet potato on medium-low until tender. (This takes about 20-30min);

In a mixing bowl, add all the rest of the ingredients and combine them all together;

Preheat the oven to 180ºC;

Once the sweet potato is cooked, add it to the mixing bowl. Blend it all together until a thick batter is formed;

Pour the mixture into a tart pan lined with parchment paper. Place the tart in the oven for 50min or until the surface is golden.

Let the tart cool completely before removing it from the tart pan. Decorate it with coconut flakes and serve!
