1200gr of sweet potato

200mL of coconut drink

140gr of your favorite syrupI normaly use maple syrup or brown rice syrup

110gr of coconut flour

1 tbsp of ágar-ágar

1 tsp of vanilla extract

For Decorating:

1 tbsp of coconut flakes
Directions
This is one of my favorites desserts of all time. It´s simply delicious, it´s healthy, it´s full of nutrients and it´s so easy to make! This recipe is not mine. It´s from a book called “O livro de cozinha da Marta – Uma forma de amar” by Marta Horta Varatojo. But, since is so good, I decided to share it with you, guys.

Done

Peel the sweet potato and chop it into small chunks; |

In a large pan, add water and salt. Cook the sweet potato on medium-low until tender. (This takes about 20-30min); |

In a mixing bowl, add all the rest of the ingredients and combine them all together; |

Preheat the oven to 180ºC; |

Once the sweet potato is cooked, add it to the mixing bowl. Blend it all together until a thick batter is formed; |

Pour the mixture into a tart pan lined with parchment paper. Place the tart in the oven for 50min or until the surface is golden. |

Let the tart cool completely before removing it from the tart pan. Decorate it with coconut flakes and serve! |
