Ingredients

For the cake:

100gr of shredded coconut

260gr of all purpose flour

1 tsp of baking soda

1 dash of salt

1 tsp of vanilla extract

180gr of powered sugar(or any other sweetener)

500mL of coconut drink

For the frosting:

1 can (400mL) of coconut milk
-
50 gr of powered sugar
-
1 tsp of vanilla extract

To Decorate the Cake:

30gr of coconut flakes

Looking for the perfect coconut cake that doesn’t skimp on coconut flavor? Look no further. This is the absolute perfect coconut cake. It´s full of coconut flavor and topped off with a coconut cream frosting. Is´s also my father´s favorite dessert!

Let the can of Coconut milk in the fridge overnight; |

For the Cakes:Preheat the oven at 160C; |

In a large bowl, add all the cake ingredients and wiz it very well until truly combined; |

Line two 15cm diameter forms with parchment paper; |

Divide the mixture in half and pour each mixture into each form; |

Bake the cakes in the oven for 40 min and let it cool completely. |

Preparing the frosting:In another bowl, combine the ingredients for the frosting and leave it in the fridge overnight. |

Assembling the Cake:Spread the frosting on top of each cake and put one cake on top of another; |
